Refried Taco Bean Dip
1. 1 Can refried beans green chili peppers drained or grd. hot red peppers, or some kind of mild pepper, your choice
2. 1 small sour cream 1 pkg. of Taco seasoning mix &nb sp; sharp cheddar cheese
mix #1 in a larger bowl, #2 mix well in smaller bowl, then mix them well together in the larger bowl
Put in a shallow 9x9 container w/ a lid, sprinkle a good layer of cheese over top, let set about an hr. then refrigerate, gives the cheese alittle time to melt. Serve with your favorite tortilla chips. Great for a party, and with beer.

Hobo Stew
1 1/2 lb. lean grd. beef, cooked and drained add in a large pot with
lg can of tomato juice or V-8, your choice lg. onion diced 2 celery stalks, cut and diced fairly small mushrooms-optional, canned or fresh
2 beef bullion cubes, 1/2 c. water, dissolve in microwave 1 can of mixed veggies, (2 only if you need more filler) 1 can of corn 1 can of peas
spices that can be used to 'your liking': garlic, sage, thyme, oregano, celery seed, rosemary, curry powder, cay. pepper, etc. and of course black pepper and salt. Mix and match.
Doesn't have to cook long if you need something quick to fix. Not bad with cornbread either! (I like cornbread, if you cant already tell.)
